Ingredients - for 4 servings -

  • 1 shortcrust pastry
  • 1 log of fresh goat cheese (approx. 200 g)
  • 6 large yellow onions
  • 3 eggs
  • 20 cl whole milk
  • 15 cl liquid cream
  • 30 g butter
  • 1 tbsp light brown sugar
  • 2 tbsp Darégal frozen tarragon
  • 1 pinch grated nutmeg
  • Salt, freshly ground pepper

Preparation

  • Prepare the onions: Finely slice them and gently sauté them in foaming butter. Add the sugar and let them caramelize over low heat for 15 to 20 minutes. At the end of cooking, incorporate the Darégal tarragon. Set aside.
  • Line a rectangular mold with the shortcrust pastry. Prick the bottom with a fork and refrigerate.
  • Prepare the filling: In a bowl, beat the eggs with the milk and cream. Season with salt, pepper, and grated nutmeg.
  • Assemble the quiche: Spread the caramelized onions over the bottom of the pastry. Pour the quiche filling over them. Harmoniously arrange slices of fresh goat cheese log on the surface.
  • Bake at 180°C (th. 6) for 35 to 40 minutes, until the quiche is golden and set.
  • Serve: Upon removing from the oven, sprinkle with Darégal tarragon.
