Ingredients - for 4 servings -

  • 1/2 melon
  • 1/4 watermelon
  • 4 mini burratas
  • 5 cl olive oil
  • 5 g Darégal frozen basil
  • Salt, freshly ground pepper

Preparation

  • Prepare the tartare: Cut the melon and watermelon into small, regular cubes. Set aside in a bowl. Add a pinch of salt, a grind of pepper,a drizzle of olive oil, and the Darégal frozen basil. Mix gently.
  • Plate: Using a presentation ring, distribute the tartare onto plates. Press lightly to hold its shape. Place a mini burrata in the center of each tartare. Mix a little olive oil with a pinch of Darégal frozen basil, then gently drizzle this flavored oil over the burrata. Serve well chilled, ideally after a short time in the refrigerator.
