Ingredients - for 4 servings -

  • 250 ml freshly squeezed orange juice
  • 50 ml lemon juice
  • 65 ml lime juice
  • 20 g Darégal frozen basil
  • 45 g mild honey
  • 5 g light brown cane sugar
  • Orange segments
  • Brown sugar for rimming glasses
  • Lemon or orange slices

Preparation

  • Prepare the granita: mix the orange, lemon, lime juices, and honey. Pour the mixture into ice cube trays and place in the freezer for at least 4 to 5 hours. Remove the ice cubes from the freezer and blend them in a blender until a granita-like texture is achieved. Add the frozen basil, blend quickly to incorporate it well without pureeing it.
  • Assemble: rim 4 glasses by dipping them in lemon juice, then in brown sugar. Distribute the granita into the glasses. Garnish with a citrus slice and a few basil leaves. Serve immediately, accompanied by small skewers of orange segments and basil leaves.
