Ingredients - for 4 servings -

  • 8 organic extra-fresh eggs
  • 150 g button mushrooms
  • 20 g butter
  • 25 cl thick crème fraîche
  • 2 tbsp. Darégal frozen chives
  • 8 thin slices smoked bacon
  • Salt, freshly ground pepper

Preparation

  • Prepare the bacon crisps: Preheat the oven to 160 °C. Place the bacon slices between two sheets of baking paper. Bake for 20 to 30 minutes until crispy. Drain on paper towels.
  • Preparation: Clean and finely slice the mushrooms. Sauté them gently in butter in a pan until they release their water and lightly brown. Add the crème fraîche, season with salt and pepper, and incorporate 1 tbsp. Darégal frozen chives. Divide the mixture into 4 ramekins. Carefully crack 2 eggs into each ramekin. Lightly salt and pepper.
  • Bake in a water bath: Place the ramekins in a dish filled with hot water and bake at 180 °C for about 10 to 12 minutes, until the whites are set but the yolks remain runny.
  • To serve: Decorate with the remaining chives, accompany each baked egg with crispy bacon crisps to dip into the runny yolk like toast soldiers. Serve immediately.
