Ingredients - for 4 servings -

  • 400 g pumpkin flesh
  • 250 g drained chickpeas
  • 2 tbsp tahini (sesame paste)
  • 2 tbsp fresh lemon juice
  • 4 tbsp extra virgin olive oil
  • 1 tbsp Darégal frozen garlic
  • 2 tbsp Darégal frozen coriander
  • 1 pinch ground cumin
  • Salt and freshly ground pepper

Preparation

  • Prepare the pumpkin: cut the flesh into cubes, then steam or bake them (180°C, 25-30 min) until very tender. Drain carefully to remove excess water.
  • Prepare the hummus: In a blender, combine the cooked pumpkin, drained chickpeas, tahini, lemon juice, and garlic. Blend until smooth, gradually adding the olive oil. Add the cumin, salt, and pepper, then incorporate the Darégal frozen coriander. Blend again until smooth and creamy. Taste and adjust seasoning.
  • Serve: Serve chilled in a bowl, drizzle with a little olive oil, and sprinkle with a little extra coriander.
