India is the country of extremes with more than 1 billion inhabitants, more than 3000 languages and dialects spoken and several dozen gods. It is normal and fitting that its cuisine is very cosmopolitan.
India’s cuisine is quite diversified and includes several spices that are often ground and mixed in assortments. In addition, there is rice and wheat, this nation’s primary foods.
But what can one say about this cuisine with a thousand faces:
- curry: this can either be a sauce that accompanies dishes or the dish in general
- biryani: this chicken or lamb dish is mixed with finely spiced rice with saffron
- tandoori: chicken or fish are marinated with herbs before being cooked in a terracotta oven called a tandoor
- naan: this bread pancake cooked in a tandoor can be plain or cheese filled
- samosas: these small triangular turnovers are stuffed with a vegetable or meat filling
- lassi: this typically Indian fermented yoghurt drink can be drunk plain, salty, sugary or spicy.
