Ingredients

  • 4 turkey fillets
  • 12 smoked bacon wrapped prunes
  • 200g of rocket leaves
  • 4 lemons
  • 1 tablespoon of ground caraway
  • 4 tablespoons of olive oil
  • salt
  • pepper
  • 2 tablespoons of Darégal Coriander
  • 1 tablespoon of Darégal Ginger

Instructions

Serves 4

  1. Cut the fillets into large dice.
  2. In a large dish, mix the olive oil, the lime juice the ginger the coriander and the cumin.
  3. Add the turkey dice.
  4. Season and mix well so that all the turkey is covered with the marinade.
  5. Leave to stand for 2 hours.
  6. Quarter the limes.
  7. On the skewers, place the turkey, the prunes and the limes.
  8. Grill on the BBQ or under the oven grill for 15 min.
  9. Serve hot on a bed of rocket.
