Tajine of Lamb with dried fruits with Coriander

Ingredients

  • 1 kg leg of lamb roughly diced
  • 8 driedapricots
  • 8 prunes
  • 4 dried figs
  • 10 sun-dried tomatoes
  • 10 almonds
  • ½ cinnamon stick
  • 5 cardamom pods
  • 1 pinch of caraway
  • 2 tablespoons of olive oil
  • salt
  • pepper
  • Coriander
  • Shallot

Serves 4

  1. Open the cardamom pods and extract the seeds.
  2. In a cast-iron pan, fry the cardamom seeds, the cinnamon, the cumin, the meat, the onions and the shallots in olive oil.
  3. When the lamb and the onions are golden, add the dried fruits, the almonds and the tomatoes.
  4. Season well.
  5. Add 2 glasses of water.
  6. Cover and simmer for 1 hour stirring occasionally.
  7. Sprinkle with coriander.
  8. Serve with semolina or cracked wheat.
