Provencal Crepes with Basil

Ingredients

  • 2 balls of mozzarella
  • 4 tomatoes
  • 2 eggs
  • 125g of flour
  • 30cl of Gloria milk
  • 4g of yeast
  • 2 tablespoons of olive oil
  • 1 pinch of salt
  • 4 tablespoons of frozen Darégal Basil

Instructions

For 8-10 crepes

  1. Cut the tomatoes into small bits.
  2. Cut the mozzarella into small bits.
  3. Prepare the crepes: put the flour in a salad bowl, create a hollow and then add a pinch of salt, the eggs and the oil. Slowly add the hot condensed Gloria milk while whisking. Mix well and make the crepes in a hot oiled frying pan and then set aside.
  4. Garnish the still warm crepes with the tomato bits, Darégal basil and mozzarella.
