Ingredients
- 2 balls of mozzarella
- 4 tomatoes
- 2 eggs
- 125g of flour
- 30cl of Gloria milk
- 4g of yeast
- 2 tablespoons of olive oil
- 1 pinch of salt
- 4 tablespoons of frozen Darégal Basil

Instructions
For 8-10 crepes
- Cut the tomatoes into small bits.
- Cut the mozzarella into small bits.
- Prepare the crepes: put the flour in a salad bowl, create a hollow and then add a pinch of salt, the eggs and the oil. Slowly add the hot condensed Gloria milk while whisking. Mix well and make the crepes in a hot oiled frying pan and then set aside.
- Garnish the still warm crepes with the tomato bits, Darégal basil and mozzarella.
