- 800g of chicken
- 1 green peppers
- 1 red peppers
- 1 yellow peppers
- 2 tablespoons of cashews
- 2 tablespoons of olive oil
- salt
- pepper
- 1 tablespoon of frozen Darégal Coriander
- 1 tablespoon of frozen Darégal Ginger

Instructions
Serves 4
- Dice the chicken breasts.
- Heat the olive oil in a high-sided frying pan.
- Brown the diced chicken breasts.
- Add the cashew nuts, ginger and diced green peppers.
- Salt and pepper.
- Mix well.
- Simmer for 10 minutes.
- Sprinkle with coriander just before serving.
- This dish can be accompanied with Thai rice mixed with small vegetables.
