Macaroni with Aubergine and Basil mozzarella

Ingredients
- 400g of pasta
- 1 jar of sun-dried tomatoes
- 1 aubergine
- 150g of mozzarella
- 50g of black olives
- 2 tablespoons of olive oil
- salt
- pepper
- 1 tablespoon of frozen Darégal Garlic
- 2 tablespoons of frozen Darégal Basil

Instructions
Serves 4
- Dice the mozzarella and leave aside.
- Wash and dice the aubergine.
- Fry the aubergine and garlic in a pan with warm olive oil.
- Add the sun-dried tomatoes and the olives.
- Add seasoning.
- Simmer for 10 min.
- Meanwhile, cook the pasta al dente in boiling salted water.
- Drain them.
- Mix to the preparation, cooking for 3 minutes.
- Pour on a serving dish.
- Add the mozzarella.
- Sprinkle with basil.
- Enjoy warm.
