Macaroni with Aubergine and Basil mozzarella

Ingredients

  • 400g of pasta
  • 1 jar of sun-dried tomatoes
  • 1 aubergine
  • 150g of mozzarella
  • 50g of black olives
  • 2 tablespoons of olive oil
  • salt
  • pepper
  • 1 tablespoon of frozen Darégal Garlic
  • 2 tablespoons of frozen Darégal Basil

Instructions

Serves 4

  1. Dice the mozzarella and leave aside.
  2. Wash and dice the aubergine.
  3. Fry the aubergine and garlic in a pan with warm olive oil.
  4. Add the sun-dried tomatoes and the olives.
  5. Add seasoning.
  6. Simmer for 10 min.
  7. Meanwhile, cook the pasta al dente in boiling salted water.
  8. Drain them.
  9. Mix to the preparation, cooking for 3 minutes.
  10. Pour on a serving dish.
  11. Add the mozzarella.
  12. Sprinkle with basil.
  13. Enjoy warm.
