Chicken stir-fry with cashew nuts and chive

Ingredients

  • 800g of chicken breast
  • 150g of frozen broccoli
  • 1/2 red peppers
  • 1/2 yellow peppers
  • 150g of frozen broad bean
  • 150g of frozen beansprouts
  • 2 tablespoons of soya sauce
  • 60g of cashews
  • 2 tablespoons of olive oil
  • 1 lemon juice
  • 1 tablespoon of frozen Darégal Garlic
  • 2 tablespoons of frozen Darégal Chives
  • 1 tablespoons of frozen Darégal Ginger

Instructions

Serves 4

  1. Cut the chicken breasts in small strips.
  2. Mix the lemon juice and the soy sauce in a bowl and leave aside
  3. Warm the olive oil in a pan and fry the garlic, stirring occasionally.
  4. Add the chicken breasts and simmer. Leave aside.
  5. Add the bean sprouts, the broad beans and the broccolis and cook for 3 minutes.
  6. The vegetables should be cooked but crunchy.
  7. Pour the lemon-soy sauce juice in the pan and mix well.
  8. Re-heat  the meat for a few minutes.
  9. Add the cashew nuts.
  10. Sprinkle with chives.
  11. Serve with Thai rice or Chinese noodles.
