Ingredients
- 3 slices of white-meat tuna
- 500g of romanesco cabages
- 500g of carrots
- 500g of leeks
- 500g of turnips
- 1 bag of fish fumet
- 2 tablespoons of frozen Darégal Dill
- 2 tablespoons of frozen Darégal Onion

Instructions
Serves 6
- Peel and wash the vegetables.
- Cut the carrots in half.
- Prepare the court bouillon with the sachet of fish stock.
- Add the onions and turnips.
- Dip the carrots in the court bouillon.
- After 10 minutes, add the leeks and 10 minutes later the romanesco broccoli.
- Cook 10 minutes.
- Strain all the vegetables and keep them in a warm dish.
- Dip the tuna in the court bouillon and cook it 5 minutes.vStrain it.
- Arrange the tuna on a serving dish. Surround with the vegetables.
- Sprinkle with dill.
- Serve immediately.
