Spring Vegetable Crumble with Tarragon

Ingredients
- 300g of frozen peas
- 200g of frozen beans
- 200g of frozen fava beans
- 200g of carrot sticks
- 80g of grated parmesan
- 120g of flour
- 1 tablespoon of olive oil
- 100g of butter
- salt
- pepper
- 2 tablespoons of frozen Darégal Tarragon
- 2 tablespoons of frozen Darégal Onion

Serves 4
- Prepare the crumble dough: mix the Parmesan and flour in a bowl. Incorporate the butter. Mix the ingredients to form small balls. Let it rest 1 hour in the refrigerator.
- During this time, heat the olive oil in a frying pan over high heat.
- Add the onion and brown lightly.
- Add the peas, carrots, beans and fava beans.
- Salt and pepper.
- Cook it 10 minutes over medium heat while stirring regularly.
- Sprinkle with tarragon at the end of cooking. Keep warm.
- Light the oven and heat to 180°C (thermostat 6).
- Lay the crumble balls on the oven tray covered with greaseproof paper. Put them in the oven and cook 20 minutes until they are golden coloured.
- Sprinkle the crumble balls over the vegetables.
- Serve hot immediately.
