Carpaccio of king scallops and salmon with Dill

Ingredients

  • 8 king scallops
  • 4 thin slices of fresh salmon
  • 4 tablespoons of olive oil
  • 1 lemon juice
  • 1 lime juice
  • pink peppercorns
  • salt
  • pepper
  • 3 tablespoons of frozen Darégal Dill

Instructions

Serves 4

  1. Using a sharp knife, thinly slice the scallops in their width.
  2. Squeeze both citrus fruits in a bowl.
  3. Add the olive oil and  dill.
  4. Season well .
  5. Mix it together.
  6. Place the salmon and scallops in a serving dish.
  7. Pour the dressing on top.
  8. Toss with care and marinate for 15 min in the fridge.
  9. Sprinkle the remainder of the dill just before serving.
  10. Serve with toasted farmhouse bread or warm blinis.

Tip:

If using frozen scallops, thawing them in a milk and water mix will keep their flavour intact.
