Description:
Since the olden days, watercress has had the reputation of a condiment as well as a medicinal plant.
Cultivation:
Watercress is only cultivated in cress beds, where it is watered with spring water. Such technique started in Germany in the XVII century.
In France, it is mainly produced in the Essonne and Seine-Maritime regions.
The leaves are harvested from April to June.
Favourite recipes:
Watercress is slightly bitter.
It can be used raw or cooked.
It is delicious in salads as well as in powder form on sauté potatoes
It is also used often in soups.
Uses:
During winter, watercress replaces parsley to give a fresh touch and decorate dishes.
