Description:

Portulaca has been consumed for more than 2000 years in India and in Persia.
It was already used as a vegetable, spice and medicinal plant in ancient Egypt.
The name of the plant comes from the Latin pulli pes which means chicken foot, referring to its shape.

Cultivation:
Portulaca is a plant, which is often considered as a weed which is found in gardens of warm areas and particularly in the south France.
In France, it is harvested from June to October.

Uses:
The leaves and stalks of the portulaca must be consumed young, in order to keep their pleasant acidulate flavour and crunchy.
It is at the base of the diet in Crete.
Raw, it accompanies well salads.
Cooked, they are consumed as vegetables.
