Horse radish was known already by the Egyptians.
In the XVII century a horse radish beer to cure scurvy was developed in England and Germany.
It is also called "cranson", "mustard of the Germans" or "cran de Bretagne".
Cultivation:
Horse radish is cultivated in Europe and in the United States.
Horse radishroot is harvested in autumn, before the first frost.
Uses:
The plant is cultivated for its fleshy root, hot and peppery, which adds character to sauces and accompanies fish, white meats and poultry.
During the Easter period, meat accompanied by horse radish is a traditional dish in Austria.
In Alsace, it is appreciated as an accompaniment to the traditional horse radish
Horse radish is also the main ingredient of the Japanese wasabi .
It should not be cooked as it loses its characteristics.
