Description:
Traces of its use have been found from the first century BC.
Its name comes from the Arab "Sabu radj" which means "père de la sueur" (father of sweat) because of its sudorific properties.
Greeks and Romans thought it gave them courage.
Cultivation:
Spontaneous in Western Europe and cultivated in temperate regions of the North America.
The whole plant must be harvested when in flower (April)
Uses:
Borage leaves are juicy with a cucumber flavour.
They are used raw in salads or cold drinks.
The leaves are steamed in order to maintain the aroma.
The flowers flavour drinks and can also be used preserved.
